This is a tasty side dish geared for 4, but can be increased by adding 1 squash for each additional person. Increase or decrease the onions as needed. Mixing squash types makes for an appealing, colorful dish.
Quick and easy! Had this at a choir luncheon and everybody asked for the recipe. Great on a cold day!
My tip is to weigh the potatoes. The recipe calls for three pounds, so don't guess.... "well there's 10 potatoes in this 5 lb bag, so divided by 5 equals 2 potatoes times 3 equals 6 potatoes".... don't do that! That is calculus, not cooking! The consistency of the potato mixture before you cook it should be a little runny and if you use too many potatoes it won't work right.
A twist on traditional mac and cheese with the addition of yummy butternut squash. This recipe freezes well and is great as leftovers.
I just made this up, a simple meal inspired by lots of thai soups I have eaten!
Tastes like the popsicle, can be eaten like mousse or served with bits of angelfood cake as a layered dessert
I modified this from a recipe I found on line - and made it healthier for those counting calories. I hope you enjoy!
This salad truly substitutes for potatoe salad. If you didn't know it was made of cauliflower you would probaly first think it was a traditional potatoe salad.
Proportion your stuffing so you can control how much you eat, not to mention you get a nice crispy top too!
Quick and easy Tacos made in 15 minutes. These tacos are made with lean ground turkey, a healthier choice and taste much better than beef tacos. Atleast most kids think so!
This is a great veggie taco, no shell, lots of fresh vegetables and 100% delicious.
I make a variation of this each time, but this is my favorite combo so far. I have also tried filling with rice, chicken, zucchini... whatever i happen to have. Filling without the shrimp and vegetables is just a basic jalapeno popper without breading. I have experimented with breading too, but it looks messier, takes longer, and is less healthy. (I almost never follow a recipe and do it differently each time, so take my measurements "with a grain of salt.")
I put lots of veggies in my chili. You can make this with lean ground turkey to make it even healthier!
