This is a flavorful soup that is great when it is cold outside. A lot less fat than traditional potato soups.
This isn't the lowest in fat and calories, but it is very tasty and filling! My husband loves when I make this! And for a truly HUGE appetite, this can be turned into 2 servings by doubling the nutrition info (note, it will be difficult for anyone to eat this as a 2-serving recipe, though).
One of our local diners makes a soup similar to this - a creamy potato soup with ground beef in it. It's delicious, but more fat than I'm able to eat. I made a version of it that was more friendly to my gastroparesis diet! Why is it called Witch's Brew? Cause I asked my husband what to name it, and that's what he came up with! (I'm a Witch, and I "brewed" it!)
This is a delicious and healthy recipe originally from Prevention Magazine. It is high in fiber and potassium, and low in fat. VERY NUTRITIOUS.
The barley for this recipe is hard to find for first timers. Just go to the grains section and look on the top or bottom shelf. It is in a white/yellow box with the Quaker man on it. Make sure you get the "quick" barley. It is worth it.
This recipe was my own creation based on my taste preferences. It is a hearty, filling, high fiber, high protein soup/stew with a slight mexican flair.
You could substitute ground chicken for turkey, but make sure it is ground chicken breast.
