Any beans will be approximately the same caloric value. Add as many fresh veggies is you like - it will lower the total caloric value and increases the number of servings. Any combo of sweetener and vinegar works.
This chowder is so creamy and satisfying -- comfort food at its best, for less than 250 calories in a nice big serving. Perfect for soup season!
This is a thick soup that you could put over rice. It has tons of herbs and green veggies. the more you slow cook it the better it tastes. The quantities you add can be varried and it's very versatile, like basil add some, can't stand dill omit it.... it's a soup so anything goes.
This is a simple creamy soup. I also add a few leaves of fresh oregano for taste.
This is a great lite dip or it can be used in place of sour cream on top of enchiladas, in tacos, etc. or in place of mayo on a sandwhich!!
This delicious African-influenced soup was featured in the January-February 2011 issue of VegNews magazine. I added more sweet potato, garlic, vegetable broth, and kidney beans than the recipe called for, doubling the yield.
This is great to use as a dressing for pasta salad, or, as I used it, for couscous salad. The original recipe called for honey, but since I don't like honey and wanted to save calories, I used an approximately equal amount of Splenda. This is from the "Company's Coming" series of cookbooks. I tried it today over a cucumber, feta cheese, raisin, onion, red pepper and couscous salad, and it was wonderful. Even won raves from the harder to please family member. If you are like me and prefer a stronger vinegar flavour, you can add in more of the above-noted white wine vinegar, or even some balsamic once you have dressed the salad, to taste. According to the Company's Coming cookbook, this was intended to dress approx. 1 cup of couscous, plus 2 cups of cucumber, 1 cup zucchini, and other assorted ingredients. I don't find it to be enough, because I like strong flavour. I doubled the recipe and used it to dress a 1.5 cup (cooked) serving of couscous and the other salad mixings.
