Dice chicken in bite sized pieces and cook thoroughly. Spray nonstick cooking spray on one side of 2 tortillas and place that side down on a cookie sheet. Combine diced cooked chicken, salsa and cheese in a bowl. Spread mixture on tortillas. Top with remaining tortillas. Bake 16-18 minutes at 350 degrees. Cut into quarters and enjoy with fat free sour cream or remaining salsa. (Must add extra calories for toppings).
This recipe is one of my new favorites, 30% fewer calories and almost half the fat! Plus it's great reheated and just a filling meal on it's own.
This has been a family favorite for years! But I've modified it a bit to lower the fat and calories. I used Ragu Light Tomato & Basil instead of marinara and you can lower the fat and calories even further by using part skim mozzarella.
I usually use ground (or diced up) chicken, but tried it with turkey and it was just as good...so I calculated it using turkey. NOT INCLUDED in the nutritional values, but recommended topping would be a tablespoon of sour cream. It totally makes the dish!
