This is just a very basic chicken salad for topping off greens or slapping between a couple slices of bread. It's a basic recipe which, in the past, I've done with much more mayo - the milk thins out the mayo and helps spread the flavor out in this variation. Adding dried cranberries or chopped nuts makes it even better, but doing that, one should remove the relish and add a little more milk (maybe up it to 3 tablespoons of milk). This is a -big- recipe because it keeps for many days in a sealed container.
You can make this hot or cold. Hot meaning panini style, grilled cheese, open faced, or however you would like. Cold meaning just that. Put everything together and eat to cook time for that.
The cookbook calls for Chicken Thighs but I used the Breast and used reduced fat sour cream...
I just pulled this together from ingredients on hand tonight and it smells heavenly! I thought I bought chicken breasts... surprise!
The paprika sweetens the coconut as does the baking process so no sugar is needed for this to turn out sweet and delicious.
I found a recepie for pita pizzas and thought a pepperoni one would be great~
