My husband and I love chili cheese ANYTHING...I came up with this recipe when I realized I had potatoes I needed to use! This could easily be made healthier with low-fat cheese!

YUMMY!! This is a great way to eat your veggies. I haven't tried it with the regular zucchini, but I imagine it's great. Try it without the sausage as well.

This recipe makes a large batch. We put it on eggs, fish, chicken, salad, scoop it with celery & cook with it.
Add a LITTLE extra flavor to your veggies by pan frying up some turkey bacon while you steam your veggies until they are ALMOST DONE. Then add them to the pan with bacon and stir. The flavor of the bacon permeates the veggies. This IS tastier with real bacon as the flavor is stronger, but healthier with the turkey bacon.
