Salad I made with some left over ingredients from spring rolls. No peanut butter in the house so tried it with this fresh lime vinaigrette instead.
The crunch a dried fruit make this slaw popular even with folks who don't normally like slaw. The original recipe used regular mayonnaise, but using light cuts significantly on calories and fat.
Basically put as many different kinds of flavors in that you like. I like to use dried fruits and seeds.

I use this insted of croutons on top of salad. It's best if used with Oriental Sugar dressing (recipe on this website), sliced red onions and red leaf lettuce.

I found a base recipe online for this dressing and I went with it and this is what I come up with. I get tired of olive oil/vinegarette type dressings so I wanted something a little creamy and this is perfect if you like limes.

other fresh herbs can be added in. Maybe some finely chopped fennel root or celery. Serrano peppers? For a more complete protein, maybe serve over cooked, cold quinoa.
