To Make a Tart of Greens
Take spinach, boil it and chop it small and grate Parmesan cheese thereunder, a little pepper, small raisins, a flowing butter thereunder. Salt it and bake it and make a tart therefrom, [the same as] how one make the covered tart normally.
This is my adaptation of a traditional Greek dish. Took out eggplant and substituted carrots. bell pepper, and sweet potato.
A light Parisian salad good as an accompaniment to a sandwich, dinner, or good by itself.
Makes a hearty meal - servings = 1 cup - or a side dish, with browned tilapia or other sauteed fish like salmon.
Subtitute celery for broccoli if you don't like broccoli, or regular potatoes for sweet potatoes. But good just as it is!
This is based on a Wegmans recipe, but without their basting oil and with quantities adjusted for lower calorie count. The taste is lighter and fresher.
Holiday favorite... could be made lower calorie with less butter, skipping the bacon, and using light sour cream

this recipe came from my GT EXPRESS 101 cookbook, and I love it!! but i wanted to make it healthier, and also offer a way to cook it even if you don't have a GT EXPRESS machine. makes a good side dish or easy main meal. you can use corn chowder without chicken for vegetarian prep. omitting the topping reduces fat and calories even further.
