This is one of my family's favorite ways to have red potatoes. I love the fact they are so quick and always turn out perfectly done on the inside and always crispy on the out. Even pretty good the next day warmed up, if you have any left.
Chop up ingredients into chucks. Mix in sour cream and place in the fridge for 30 minutes.
Spray 9 x 13 inch glass dish with butter flavored cooking spray. Add potatoes and cheese to prepared pan. Set aside.
In a bowl whisk together eggs, milk, Mrs. Dash, salt, pepper and garlic. Pour over the potatoes. May cover and refrigerate overnight before baking.
Bake for 45 to 55 minutes 400 degree oven or until eggs are set in ceenter. Let cool on a wire rack for 5 minutes before serving.
May also add 1 1/2 c of chopped ham, turkey, or shrimp
