I have never been satisfied with the homemade low-fat baking mix. The original called for 2 cups shortening and the mixes I have found called for 2/3 cup shortening. I added another 1/3 cup shortening and came out with a better product.
First attempt at adding protein powder to pancakes ... success! If anything, could be moister. More yogurt, maybe.
This recipie is low carb and no sugar. You can eat it with butter and cheese. Delicious!!!

Flourless, low-carb and gluten free, for the keto-er looking for something to butter. Makes a loaf pan of quick-bread textured stuff that doesn't taste as much like peanut butter as you might think!
This is a variation of a recipe I found in "Clean Eating" magazine. I changed a few of the ingredients to fit with my organic diet.
From "Taste of Home." I used canned sweet potatoes, and mash them with a fork, or in a blender for a smoother texture.
They are moist, but not light. Yum!
I just discovered that I like Brussels sprouts! These are your grandma's nasty boiled sprouts. These are full of flavour and dimension, and they're wonderful. I can't get enough of them!
Note that this recipe is for cooking frozen sprouts without thawing them, making them really easy to prepare.
You can modify this recipe to include any kind of fruit you want. My list is the fresh fruit I had in the house. It would have been perfect with blueberries added, but I didn't have any!
Modified a recipe I found, removing all the fat. Its a nice little dish, can adjust the seasoning to taste
