These pancakes are incredible...it's hard to believe they are good for you. My kids even like them. For variety, sometimes I sprinkle them with pecans or walnuts, or blueberries before I flip them. As an alternative to maple syrup, I put Smucker's sugar free jam in the microwave to melt it a bit and then pour a few tablespoons over my pancakes...yummo!
When baked this way, fennel tastes very buttery and is just delish!! I never was a fan of fennel until I made it this way!

The original recipe called for 1 cup of sugar and regular canned peaches. I substituted canned peaches in water pack and added 1/2 tsp of ginger to cut the sugar content.
