We had a bunch of leftover smoked chicken quarters that we didn't want to throw out or freeze, so we made a soup!
I used 6 chicken breast, 12 oz of sugar free bbq sauce and .5 cups of light Italian dressing.
This recipe is open to whatever you want to add. Rice or Bulger can be used instad of barley. Low sodium broth/ bullion also work.

This is an easy way to roast a chicken. The butter gives it that nice golden brown look. Serve with veggies and mashed potatoes for a good homecooked meal. My family LOVED it!
Yummy hot meal. I put it on a bed of lettuce or on a low carb wrap. Great for left overs.
