You can use the veggies in this recipe, or use it as a vehicle to clear odds and ends out of your fridge. That's how I usually cook.
Yet another happy home for leftovers. As with most of my recipes it's very flexible and forgiving if you have a different assortment of veggies. Make the tahini sauce separately and pour it on as a condiment.
I had beets, sweet potatoes and a butternut squash hanging out in my cupboard leftover from the winter stock. I decided to cook them up and see what kind of a summer salad recipe I could make from them. This ended up being quite good chilled, but you could also eat it warm.

Put all ingredients in a Vita-Mix blender, blend on high for 6 minutes (until steam comes up through the top). Eat and enjoy!

A vegan, nut-free (for those with allergies), relatively healthy dessert that isn't lacking on flavor. It's not Grandma's cobbler - so don't expect super sweet! :)
