This recipe I copied from the E2 Engine Diet book. Its for those who eat plant-based foods or just plain good old healthy dessert. Very few calories for a large portion - very yummy Very quick and easy to do. Also freezes well.

NOTE: When I made this recipe I accidently left out the milk and the flax. It turned out great!!! The nutritional information will change based on the milk or milk-alternative choice.

I got this from Macheesmo! Best served cold or at room temperature. Add some extra vinegar to refresh leftovers.

This recipe is completely vegan if natural peanut butter and vegetable stock is used.
An easy side salad at home to serve with grilled chicken or fish. Makes a good picnic salad because it can be served at room temp.
