This is a quick, easy side dish, good for a little variety.
This recipe is a great way to introduce tofu to people who have never had it or claim to hate it. My family didn't even realize it wasn't just eggs. You may want to reduce the red pepper if you don't like spice. My little one said it was a bit spicy...but it was nothing he couldn't handle with the help of a little milk! To reduce the calories, you could use a different crust, like one made of rice or hashbrowns. I stuck with the flaky pie crust to give it a true quiche taste, since I was altering the filling. =)

This is good hot or cold. Alone or with Red and Purple. I originally intended to mix R&P with G&Y but they are so pretty separate. They are especially lovely side by side in a bowl with a poached egg on top.

I changed this recipe from another one I had and loved. Before it called for chicken, sun dried tomatoes and feta cheese. I don't eat chicken anymore & didn't have any feta or sundried tomatoes.

The original recipe came from Food&Wine magazine. I have reduced the amount of sugar significantly as the ripen banana is usually very sweet. And I made three times less muffins than the original recipe called.
I have a ton of tomatoes and I found this recipe from How Sweet it Is. I modified it due to ingredients I had, but let me tell you it tasted so good! It would be awesome tasting if you added some cooked shrimp to it!! Give it a try and let me know what you think!
This recipe comes from my Well Done (TX) Cookbook. It is so easy and tastes great! I use only 1 tbsp. sugar, but the real recipe calls for 2 Tbsp., so I reflected the change in this recipe calculation.
