Chicken Milanese
Modified the Pork Milanese recipe from Women's Health - June 2008. When I made this recipe, I made my own breadcrumbs out of toasted whole wheat bread that I put in the food processor. Served with the arugula and tomato salad mixed with olive oil and lemon juice. I cut my chicken breasts into 4 oz sizes to make sure that I have 4 4oz servings.
