I was trying to put together a quick healthy dinner with what I had available in the house & my family loved this!
Want a low carb Mexican treat? Try these net 4 carb per serving quesadilla. Talk about yummy! Adios mi amiga(o)!!! You can even add avocado (or guacamole) and/or sour cream (without hardly raising carb count). You also can add any meat of your choosing and it stays low carb.
Put the persimmon into the freezer overnight. Take it from the freezer and cut it up into chunks, like small cubes. Put it into a blender. Add the cup of nonfat milk and the honey (can use stevia equivalent for fewer calories) and 1/4 tsp cinnamon (or nutmeg). Blend until persimmon is totally diffused with the milk. The concoction will be thick and frothy, like a rich milk shake. I enjoy this quick lunch with a handful of walnuts (about 1/4 cup). Very nutritious!
I had some extra vegetarian ingredients laying around the house and decided to see what came of it, and this is what I got.
I like things a bit plain, but you can add salt or pepper to taste and I'm sure it will be delicious.
