This is an easy recipe that doesn't require a ton of prep. Make the rice ahead of time to save time! Even the kids love it!
I read about people taking fish and covering it with salsa and then throwing it in the oven. It sounded really tasty minus the fish, so I thought this simple dish up.

Chicken breasts stuffed with canadian bacon, pepper jack cheese and mushrooms, wrapped with bacon
Low Fat Version of Chinese Favorite. Recipe modified 2/5/10 to reduce sodium. Found a great teriyaki lower in sodium and eliminated sesame oil. Better taste and better for you!
P.S. I also discoverede that 1 cup of dry brown rice yieds closer to 2 1/2 cups of cooked brown rice.
Serve with something healthy and green! Feel free to add in your own touch. My hubby doesn't like onions or peppers--why I use powders! Remember small portions. This is a good Sunday meal to have every couple of weeks.

This was adapted from the original recipe submitted by SparkPeople user KAMEL622. I just wanted to try a version with less sodium and carbs. I think its just as good!
