This is such a great dish and doesn't take long if you use microwavable rice and have an already cooked piece of chicken, even roastisere(excuse spelling) chicken will work. Just saute some veggies and throw together. This a light, healthy dish that can be thrown together in 20 minutes! Buy already shredded veggies and your looking at 10 minutes!
Ok, I love Fried Rice, but never order it because it's to dam fattening and greasy. Well now I can have a healthy version of fried rice, guilt free!!!
I got this recipe from Eating Well magazine, I just changed it up a bit. This is a nice refreshing , quick cooking dish. Serve with Rice or Noodles.
This Green Curry recipe uses Chinese Eggplant, which is the long skinny eggplant with purple and green skin. It also used Thai Basil which is different from regular basil. These are the vegetables you will find in Green Curry with Chicken in any Thai restaurant in Honolulu.

My tweaks to the original recipe:
* Make it more intense: Reduce the sauce a lot; the original WW recipe calls for what amounts to a flavored au jus which just doesn't cut it
* Make it 4HB friendly: Cut the grapefruit juice to cut the sugars in half and make it a bit more tangy; if you keep the grapefruit juice, use grapefruit juice cocktail, not straight juice, or the end result will be slightly bitter
