Breakfast Recipes (Most Popular)
This is a hearty, healthy breakfast that can have many variations. Substitute any (or no) fruit or nut, and use any (or no) sweetener you choose. This example is banana-walnut, but my husband uses blueberries and no nuts. Use your favorites!
But plan ahead -- needs to be partially made the night before. No cooking needed!
Really yummy and very healthy pancakes. You will never miss the old ones again.
Egg white protein froths and makes this shake light and airy but it also has protein to stick with you, two servings of fruit and very little fat, lots of calcium for those bones. Share this with a friend or save in frig for later that day.
Bean Muffins p1
1 can white beans, drained and rinsed well
3 eggs
1/2 C splenda
1/4 C sf flavored syrup or sf pancake syrup
2 T SmartBeat or Canola oil
1 T cinnamon
1 tsp vanilla extract
1 tsp baking powder
Preheat oven to 350. Mix everything in a blender or food processor (you could use a hand mixer but texture might be lumpier). Add to muffin pans sprayed with cooking spray. Bake about 30-40 min or until firm and a toothpick comes out clean. It's hard to over cook these things!
Makes 6 jumbo muffins or more smaller. They have about 125 calories a piece if using SmartBeat, canola oil will up the calories a little.
I just made mine plain and they were really tasty but you could use these flavorings as well:
-1 or 2 T bannana extract with 2 T walnuts
-2T maple extract with 2 T pecans
-P2--zest of one lemon, 2 T lemon juice, 1/2 C blueberries (reduce sf syrup by 2T if you do this one)

Great protein waffles without butter or flour. This is adapted from a friend's recipe. You can omit the protein, the baking poder and reduce the mile to 2 TBSP to make pancakes.
I make this quick and easy concoction every other morning to jump start my day. It's high in lean protein, low in bad fats, and keeps you full until your midday snack or lunch. And it's easy to eat on the go.
This recipe is great for any meal! It's a big hit for potlucks (not to mention really easy!).
Rolled like crepes--usually makes around 12 pancakes. Fill them with your favorite fruit with cool whip and/or cinnamon sugar or Nutella or whatever hits your fancy.
