A delicious, low calorie alternative to your Sunday morning buttermilk pancakes! These delicious pancakes are light, fluffy, and extremely tasty. Don't let the pumpkin distract you- as someone who does not like pumpkin pie, I was hesistant to try these. You can taste the pumpkin slightly, but it's not overwhelming at all. The spices give the cakes a great flavour! A new addition to my family's brunch repertoire!
These are great to "grab & go" for a quick breakfast. Can be frozen in freezer bags for that quick get-a-way.
I was looking for a grab and go snack that is healthy. And one of my SP friends (CBOCEAN) mentioned that she makes egg white muffins with veggies and freezes them. So this is a variation of her recipe.
This recipe makes appx 18 muffins depending on how many veggies you add. Great to serve a larger crowd or freeze and reheat during the week for those mornings when you are in a hurry.

Idaho Sunrises are basically a baked potato filled with a baked egg! Feel free to add whatever you like such as ham or different cheeses. or spinach! Just remember, you have small space to work in!
My version of the IHOP pancake recipe... lower in fat.
Replaced sugar with Stevia.
Replaced oil with applesauce.
Replaced egg with egg substitute.
Removed salt.
This is a thick, creamy, fresh, healthy, homemade, yogurt without any of the thickeners, artificial sweeteners, preservatives, or fillers used in store-bought brands. Once you make this, as long as you always save a half cup in the refrigerator, you'll never have to buy yogurt again. I added several tips I learned along the way so you don't have to suffer through the learning process like I did. This should provide you with tasty yogurt on your first try! I prefer to use Nancy's Organic Whole Milk Yogurt for my initial "yogurt culture" due to the fact it has 15 different strains of bacteria and 127 billion live cultures, but you can use any yogurt you like as long as it has active, live cultures. I included directions on how to make Greek yogurt in step #6, I've added alternate cooking methods in step #7, and lots of tips to perfect the taste and texture to your liking. I hope you enjoy! (With sugar, it's 165 calories, 33g carbohydrate/ sugar).
This is my first remake of our traditional Sunday night dinner - Eggs Benedict. I've started here by substituting extra light cream cheese for the cream. It worked great and tasted even better than with cream. Next week I'll try replacing the butter with a lighter spread to bring down the calorie count even more!
This is a sinful treat. It's well worth the extra workout to earn these calories.
