Spelt is one of my favorite flours because it is high in fiber and protein while being good for those with wheat sensativities. This is what I use as a pancake base and I use only organic ingredients. I usualy add blueberries, strawberries, or ground flaxseed for variety. I also experiment with different extracts like vanilla, almond, or orange. To give it a more sweet flavor, add some stevia for even more fiber and no calories or artificial sweetner yuckiness.
Enhanced Oopsie Roll recipe made with peanut butter for a dairy free version ( instead of cream cheese). I would say it is way better than the original Oopsie Roll because it has more structure to it and is very bread- like. It is best served of course with some jelly or your other favorite toppings. The greek yogurt gives this a somewhat more moist (and probably less bread like to most) texture. It also gives it a boost in protein. This is my first attempt at banana bread though, so I wanted to record the little changes that I made.
I was looking for a low point Banana Nut Muffin recipe, and I couldn't find one I liked. So I put this together and it turned out really good. Extra fiber from the oatmeal, and omega 3's from the walnuts, so there are added health benefits to these too. They make 12 big muffins.
Found this recipe from NutritionMD but added the vanilla and cinnamon and used Old Fashion Rolled Oats instead of Quick oats.

I make these with half whole wheat flour and half bread flour. You can make them all wheat or all white, whatever you prefer. Enjoy!

Use this delicious recipe to make healthy and nutritious pancakes, OR waffles. The recipe is very versatile and you can substitute soy milk for regular or even buttermilk and honey for water and sugar substitute or substitute the whole eggs for eggbeaters! It makes a wonderful, filling, and guilt free breakfast. Most pancakes and waffles have about 400 calories each, these only have 110! I usually make about 16 waffles in my Belgian waffle maker, but you could make even more pancakes or mini waffles!

Very easy & quick coffee cake which is also good as muffins. Grab a couple handfulls of frozen fruit to throw into the batter and you're good to go.
