This is yummy, quick and easy to make. We enjoy this at least once a week with a side salad and sour dough bread.
I adapted a "fish curry" recipe I found on SparkPeople to my own special diabetic dietary needs. This is delicious beyond belief.
Other vegetables that cook up quickly can be used in addition to the turnip or other greens - just make sure you re-calculate the recipe numbers. Also bear in mind that the more veggies you add, the more servings you will get out of the recipe so make your own adjustments accordingly.
Serve with Brown Rice and a Salad (not figured in recipe).

Steelhead Trout is a member of the Salmon family with all the same nutritional benefits, but without as much oil, thereby making it less calories. If you can't find it, you can use any type of salmon or other fish.
This was adapted from a recipe I got out of the Oct. 2008 issue of Family Circle Magazine. I switched the veg. oil with olive oil and used Morton lite salt instead of reg. salt to lower the sodium. I also figured it into 6 servings instead of 4.

Most paella calls for chorizo or Italian sausage. This recipe uses a 'Tofurky' brand sausage. I used Kielbasa but their Italian would have been more appropriate. Nutritional info is about the same so go ahead and substitute at will!
