A wonderful and "fake" way to make Strawberry-Rhubarb jam diet- and diabetic friendly! Vary amounts of Splenda to taste, I often use less.
I have never made what I considered a "good" meatloaf until I made this one. While unconventional, this meatloaf is moist, delicious and satisfying! I serve it with cornbread, mashed potatoes and a green veg.

This is my latest attempt to make a decent, yet different, "Fig Newton" style cookie for my grandpa to enjoy - he introduced me to the classic snack and I fell in love with it at an early age! Now that I can't have the oils or fat I'm just out to make something for him!
I decided to try my hand at Kettle corn, I love kettle corn but it's expensive. This is going to be a once a week treat I think. I am going to be tweaking the recipe until it's just right. I think it needs MORE corn.
The chia seeds in this recipe will help you stay full longer. Great for a breakfast on the go or with a couple eggs if you want a larger breakfast. You could definitely make swaps to reduce fat/calories. I make this as more of an occasional treat when I have ripe bananas to use up.

NOTE: Number of servings is a guesstimate; I measured mine but not the kids' or the large amount still left over. This recipe is a first attempt to lighten up a recipe our daughter learned and loved in her cooking class at camp this summer. Clearly, there's more that can be done to lighten it up, but the kids ate it and liked it, and I think it still beats the blue box stuff for taste and nutrition.
