This recipe is a new one to us. My husband has a wheat allergy, I found it in a natural foods cookbook. They are hearty but not too sweet.
This is excellent using only self rising flour, but too high in carbs. Hence, replacing 1.5 cups of that with Almond Flour.
This recipe is adapted from a recipe Giada De Laurentiis did on the food network. I have changed it quite a bit, and my family really likes these.
**Protein=39.8%, Fat=35.1%, Carbs=25.2% ** This is a good low-carb ratio (The Zone Diet is 30, 30, 40)
This is a low-carb breakfast casserole, different from the norm because it has no dairy, uses ground turkey sausage, contains healthful quinoa, and is baked in individual serving jelly or canning jars. The quinoa is nice because of it's nutritional value, and it holds moisture well and keeps the dish from being too dry (I used to depend on cheese to do this ;)
COMBINE EGGS, OIL COCOA , VANILLA AND ZUCCHINI MIX WELL. ADD REMAINING AND BEAT UNTIL WELL MIXED . POUR INTO GREASED AND FLOURED TINS. 1/2 FULLED. BAKE AT 350 FOR 15 TO 20 MINUTES DEPENDING ON HOW BIG YOU MAKE THESE MUFFINS. MY CALCULATIONS THE FIRST TIME WHERE 26 BUT IF I MADE THEM SMALLER THEY WOULD HAVE BEEN MUCH BETTER BECAUSE THEY ARE A VERY DENSE MUFFIN AND VERY TASTEY. I REVAMPED THIS RECIPE FROM AN AMISH COOKBOOK TO MAKE IT FIX BETTER SINCE i'M DIABETIC.
This blueberry smoothie recipe contains NO dairy products and is chock full of antioxidants and other good-for-you things. To cut calories further, replace pre-made tea with one green tea bag in half a cup of water. For additional nutrients, 1/4 avocado may be added.
I adapted this recipe from a 'normal' one, replacing the butter with apple sauce, and the plain flour with whole wheat and adding the flaxseed. Males 16 1cm-thick slices. Very filling.

I can't have milk. I'm trying to cut down on my soy as well..so here you go..it's pretty tasty.
So simple yet surprisingly good. The simplicity of ingredients bring out the natural flavours so they can be appreciated.
