Hearty waffles, gluten free and low carb. Full of fiber! I tried them first with heavy cream instead of milk, but changing to milk did not change the carb content by much, and really reduced the fat!
I modified one of our favorite recipes to make it more HCG friendly. It's still delicious! It does mix 2 veggies, so it is better for the Trudeau followers, not the Simeons.

You can add flour to make the cheese sauce thicker (But watch out for the carb value to rise).
Also you can make this recipe with just 1 1/4 cups of 2% milk instead of the half and half cream and water (the cream has less carbs than milk).
I added the green beans for some colour.
Can also be served over rice or pasta if you are not concerned about the carb values.
I used already cooked chicken leftover from the Roast on Sunday.
Got the idea for this on another site. It originally called for 4 whole game hens but I changed this to accomodate a more reasonable portion size. I also broiled the hens first to cut out the fat a bit and make the skin light and crispy. You can skip this step if you are short on time. Thanks Jean for the idea!
Ingredients:
Green Peppers (bell peppers), .75 cup, chopped (remove)
Mushrooms, fresh, 5 medium (remove)
Salsa, 1 cup (remove)
Chicken Breast, no skin, 355 grams (remove)
*Extra Virgin Olive Oil, .5 tbsp (remove)
Garlic, 3 cloves (remove)
Onions, raw, 1 small (remove)
