This is a popular recipe that I have modified by adjusting quantities of certain ingredients to my taste level and to lower calories a bit.
This recipe takes a little bit of time, but first few steps can be prepared ahead of time.
* If using mature swiss chard, separate stalk from base of leaf and chop and steam stalk for a few minutes until slightly tender. (I precooked mine in microwave steamer).

I make this totally organic and you can add meat if you would like, chicken is great in this recipe. You can spice it up with hot sauce also.
Tomato based vegetable soup with barley. Add seasonings to suite your taste...Italian seasoning is a good addition. Kidney beans add protein.

Dice all vegies small and add to full can of tuna (drained). Add mayo and s/p to taste. Cut pita in half, add lettuce leafs and tuna mix. Serves 2.
I love it....my kids actually love it. Hearty and nutritious...not a typical soup at all, definitely more like a chowder.
