WOW! This is spinach? This is a quote from my 11yr old. son who hates (his words) spinach. Even my picky 2yr. old and my husband who thinks ketchup is a vegetable ate it. It may not be the lowest in calories (ingredients can easily be substituted for lower calorie counterparts) but it is loaded with lots of nutrients. Quiche is also a great way to get "rid" of leftovers not quite big enough to serve. The bacon and rice were things I just had in the fridge.

I altered this recipe from the back of a can of Campbells Low Fat broccoli cheese soup. It's very good and tastes like its full of fat but its not.
The heat on this dish can be adjusted by the amount of chipotle chilies added. I used one and it was just about perfect but if you are into spicier foods, go ahead and add up to three!
You can chop the chicken and wrap this up in a whole wheat tortilla or serve it with a black bean and corn salad.
My kids love this! Great served over brown rice. You can also double the sauce and add a bunch of broccoli as well.
