I owe the idea behind this recipe to my dog training mentor, Ralph. Slightly sweet, nutty, deliciously pumpkiny, and buttery soft, it’s an amazing fake-out recipe when you want to impress someone. I’ve made a few adjustments from Ralph’s original recipe to make it organic and come together more quickly. Gnocchi dough is great to have on hand in the freezer for unexpected dinner guests. This recipe serves 2 for a main course, or 4 as a side dish.

Sick of salad. Had some Swiss Chard at a friends house once and loved it so I decided to be adventurous and cook some up. Really yummy and think ...the spices that could be added to this leafy veggie are endless.
This is a nice way to spice up squash & zucchini into a delicious side dish. (You might want to try adding mushrooms to the mix, too.)

My son and I have liked pickle salads for years! It's a nice way to introduce more salad ingredients to pickier kids--since most kids like pickles! (It's higher in sodium than most salads though--be careful if watching sodium)
I wanted to make a lighter version of the broccoli salad. This uses turkey bacon and yogurt, in place of regular bacon and mayo. I also added cabbage and craisins for a different taste. I brought this version and the regular high-octane version and everyone preferred the low-fat version!
