This recipe originally came from the Frugal Gourmet. It is better than any canned soup and freezes well too. If fresh tomatoes are not available, canned will work, just be sure to use whole, peeled tomatoes.

I had a tasty Butternut squash soup at a fancy pants restaurant. After a few tries, I got it right and healthy! This was served in the restaurant with a drizzle of vanilla and ginger flavored cream and candied pecans. At home I eat it with warm crusty french bread. Some stores sell the squash pre peeled and cubed!

A great substitute for canned cream soups
Add mushrooms for cream of mushroom soup, peas for cream of peas or even spinach. I like it just as it is or add vegetables or meat as you llike.
