This recipe was given to me by my elderly neighbor. You can use ground beef, ground turkey or even shredded chicken. The meat and the chilies give the veggies a wonderful flavor. Hope you Enjoy.

(Vegetarian Beef broth is soy and herbs!) Very low-calorie, flavorful, hearty soup that can really warm you up.

I freeze bits of vegetables and then add them to the soup as well.

This is a left-over soup. Small amount of hamburg, onion, canned tomatoes and whatever left-over vegetables are in the fridge. You can add corn, string beans, etc. You can play with ingredients to even lower the calories more or make it vegetarian if you'd like or add pasta instead of potatoes. This is even good with all canned vegetables in the winter.
You get a little of most of your vitamins in a cup of this delicious stoup (thinner than a stew; thicker than a soup) including lots of potasium and Vitamin A. This has flavors of chicken, bacon, potato and cheese all together. Very hearty and so delicious! Try it over a healthy whole wheat biscuit!

There is nothing more satisfying than a warm hearty and delicious soup when it's cold outside. This soup is versatile (add whatever veggies you have lying around), easy and nutritious. Adding both barley and lentils makes this more nutritionally complete for the veggies out there, but feel free to just use one or the other if you'd prefer. And the servings are large! If you're having this on the side, you'll get a lot more servings than mentioned! (also it freezes really well too! so make a batch and freeze in single-serve tupperware for easy lunches/dinners!)
