Great for cold nights! This "stew" will warm you up from the inside out!
I modified this from the Ellen Show (10-05-10). Made it for the Superbowl and put it out with the "other" queso. It ran out first. It's a great faux cheese for nachos. The uses are endless. You can add anything to it... Don't forget to add your chips to your tracker. ;-)
Hint: To bring the sodium content down, which isn't reflected in the nutritional info here, I drain and rinse all of the beans. Using 4 cans of beans, at 440 mg. of sodium per serving (3.5 servings per can), I would assume that the sodium content in this recipe is considerably less after draining and rinsing the beans.
In summertime, I like to use this stone fruit salsa over fish or chicken, or as a topping for Greek yogurt.

Wow....Wow....Wow.....lighting fast and so flavorful. Feel free to substitute your favorite pasta or for a low carb version you could just leave it out completely.
This is a modified version of a recipe on allrecipes.com that I enjoy greatly and that gives you a lot of protein, a lot of taste, and very few calories. You could make it much faster and easier with pre-prepared chicken breast, first sauteed with the onions and garlic in olive oil. You would increase the amount of broth by 1/2 cup or so and wouldn't use water in that scenario.
