I added silken tofu for extra protein to balance out the carbs in the potatoes... so that we didn't need to add another side dish (like bread or a meat of some kind) for it to be a balanced and hearty meal. It turned out great! (Just make sure you use *Silken* tofu and not the soft, medium or firm kind... :)
This recipe is like a creamy tomato soup with cheesy tortellini and chicken and then a pop of color from the bright green spinach.
