Easy Summer Rolls make a refreshing summer appetizer or snack - or light dinner. Serve with sweet and spicy dipping sauce (not included). They take a little prep, but are easy to assemble.
This is a recipe from Steamykitchen.com that I've tweeked a little. Back and white sesame seeds make this a really pretty dish. If I'm in a hurry, I use Newman's Own Sesame Ginger Dressing but I've also made the lime ginger dressing from the website.

I saw this recipe on a low carb show a while back. I like it because it really cuts back on the carbs of real rice and you can add an egg roll from your local chinese place for a quick meal.
These are super-easy to make and so tasty! The chunky peanut butter and green onions give this hearty filling a satisfying crunch. This recipe makes 4 dinner-size servings - as an appetizer, it could easily feed 6 or 8.
Note: If you don't have Boston lettuce, green leaf lettuce works, too.

4 cups (about 1/2 of a 12-oz. bag) dry coleslaw mix
4 oz. cooked and chopped ready-to-eat shrimp
1/2 cup canned sliced water chestnuts, drained, cut into strips
1/4 cup bean sprouts, chopped
2 scallions, chopped
1 stalk celery, thinly sliced widthwise
2 tbsp. reduced-sodium/lite soy sauce
1 tsp. crushed garlic
1/4 tsp. ground ginger
1/8 tsp. salt
Dash black pepper
6 large square egg roll wrappers (stocked with the refrigerated Asian items in the supermarket)
Optional: sweet & sour sauce
This is a great recipe using Okara - Soy pulp that's left over from making soy milk. Okara Cookies are very popular among health- conscious dieters in Japan. It fills you up nicely. Make sure you have your drink handy because they absorb the moisture in your mouth!
An old favorite my wife and I thoroughly enjoy. A little sweet and just enough spice....delicious! Simple prep, easy to make, not a lot of crazy ingredients.
