Lots of veggies and peanut sauce add flavor to this healthy salad
i used red cabbage cuase i thought it looked pretty but you can use green if you like. this cole slaw has half the fat and carbs of regular coleslaw and taste absolutley yummy.
I am always on the lookout for lighter ways to prepare food. I know that I can make cauliflower with a sauce that tastes like a General Tso's sauce, but I really wanted to make a coating that is like that typically found on a General Tso's Chicken. And, I wanted to avoid frying.
So, I made a batter that would have worked quite well for a deep fried method, but I baked it in the oven. The results were very good.

Egg, fresh, 4 medium
*Whole Wheat Flour, 2 cup
Banana, fresh, 3 medium, mashed
Carrots, raw, 1 cup, gratted
Walnuts, 0.5 cup, chopped
Raisins, 0.2 cup, packed
Brown Sugar, 1 cup, unpacked
Nutmeg, ground, 2 tbsp
Cinnamon, ground, 2 tbsp
Simple and easy to do takes 10 minutes to make
Fill a PLATE with warm water and place rice paper sheet into water until pliable (15-30 sec) then lay paper onto dry towel, place salad on paper. Fold top end towards middle then fold bottom towards middle. fold one side over middle and roll towards the other end of the paper. Use with spring roll dipping sauce or a homemade dipping sauce.
