Use 1/2 can coconut milk instead of some of the water. Make sure to shake up the coconut milk before you open. Freeze the rest of the coconut milk to use the next time you want it.
Very Asian. The BF, who loves spicy food, loved this, which is somewhat spicy. I liked it, too.
99% of the time I walk into the kitchen hungry, usually followed by the roommate. I got the cooking creativity from my father, the skill from my mother, and combined, I come up with some odd recipes with whatever we HAPPEN to have in the kitchen. This was a winner.

Prep time is about 10-15 minutes, cooking time is about 15-30 minutes.

This has become a huge spring/summertime hit in my house; taking advantage of delicious, fresh Copper River or Chinook (Pacific) Salmon.
The fresh ginger is amazing! It is worth hunting down at the grocery store! It is excellent served over brown rice.
