Was looking for something different to serve for Sunday breakfast. My family says this is a definite keeper!
This is a juicer recipe - contains fresh juice and rind/pulp. I could not locate nutrition info for the 2 tsp of rind/pulp - but it should add a little fiber!
Nice as a spread on toast or can be eaten as a fruit compote- calories would be higher of course.
I wanted to bake low-carb, high fiber muffins in the oven, and make a batch, so, I looked at some different recipes and decided to put together my own. These turned out pretty good too! :)
These muffins are delicious. Keep them plain or add chocolate chips or raisins to spice them up!
Easy to make, keeps well in refrigerator, heats up with one minute in the microwave.
The recipe works well with a blend of Gluten free flours (e.g. rice, quinoa, buckwheat, GF oat), starches (e.g. corn, arrowroot, tapioca), and ground flax seeds. Also good with whole wheat pastry and white whole wheat flours.
