I have a juicer and make my own fresh vegetable juice every week from whatever vegetables are on hand. I also add beet and squash juice to the mix every week. I use frozen kale from my garden instead of the fresh.

These are delicious, moist and pretty forgiving muffins, add nuts, use flavored yogurt... dress them up so they are your own! Enjoy!

Now the good thing about bananas in bread is not only that they're delicious but they also help reduce the amount of fat and sugar needed and still keeps it moist and sweet. Same with the yogurt as a substitute for oil, making it extra healthy! I like the oats because they give the loaf texture and also healthy fibre. Let your bananas ripen fully for the best flavour.
We modified this recipe by using half and half instead of whole cream and added a red pepper. We further modified it by cutting the half and half by a third down to 1 cup instead of 1.5 cups.
