p.s. i didn't add in the syrup, but that's just 1 cup water, 1 cup sugar, and 1 cup of your choice fruit set on a low simmer on a back burner while you're cooking the pancakes.
I use fresh baby spinach for this--and my handy-dandy little omelette pan (a two-sided pan that snaps together for easy flipping)!

I needed a pancake that was lower fat than the norm, and therefore tweaked the original recipe (which was full of eggs and more oil) to get this fluffy, amazing version.
