Atkins Induction friendly, my version of Low carb! Spinach as posted by SLOWSET, using fresh rather than frozen spinach. The spinach is already net carbs - so do not subtract the fibre from the carb total if doing atkins - whole recipe is about 4.5 net carbs.
I've also used non-fat yogurt in place of the sour cream and get equally good results. For this nutritional calculation, I did use Egg Beaters and not real eggs. Up the cholesterol count to about 37 if using real eggs.
My husband has hit the gluten free bandwagon, I found an all purpose baking mix that made a banana bread that tasted pretty good.
This is very similar to the banana bread featured by Cook's Country tv show. I've left out the recommended walnuts, sugar syrup & extra banana garnish on top.
Delicious, quick, easy, crowd pleaser. Serves 20. May be served hot or cold. Cut into 1" squares for appretizers.

These muffins are great for a quick breakfast, or a delicious & nutritous afternoon snack. I substituted Trader Joe's Organic unsweetend apple sauce for the oil, and used almond meal for half the called for flour. This was my grandma's recipe that I re-worked to fit my dietary needs.

These are heavy, but so tasty, and good with sugar free jam.. You can use other bran or wheat cereals..
