A delicious homemade pie, this recipe only makes enough dough for a bottom crust, I don't add a top layer to my pies in order to keep the calories & the carbs at a reasonable level. Since there is no top layer of pie crust I usually add some fresh raspberries for visual appeal.
I took the original recipe and added lighter ingredients. I loved them and I hope you do too!
This makes about 6 quarts. I figure 1 quart per 9" pie, cut into 8 pieces each makes 48 servings.

This might be a once-per-year recipe, but it sure is a doozy!
Dairy-Free, Egg-free. Can probably substitute Smart Balance for the oil. I use natural, unrefined sugar. These are very yummy!
