slightly modified from FITFORLIFE22's recipe - makes large, low fat, low sugar, delicious muffins!
These crunchy cookies are very soft on the inside.
They are somewhat healthy - containing oats, rice cereal and not too much fat.
Cream cheese keeps this pound cake moist, and almond flour gives it a nice texture.
Soft peanutbutter cookies without the guilt
The tsp of sugar is just 2 tbsp and so is the applesauce. The conversion gave me what is in the ingredients list, but I wanted to make the process easier for others. The peanutbutter is 1/2 cup as well.

Good for breakfast, as part of brunch, or dessert. Also tasty made with other types of fruit - apples, blackberries, blueberries, etc. Basically, you need a cup of fruit. Really good with vanilla ice cream, if you can afford the calories.
If you're a vegan, use a teaspoon of canola oil instead of the butter. It works.
Can be prepared as a cake with lemon frosting, I recommend it as a filling as the berries float to the top and make such a pretty topping I don't like to cover it up with frosting. As a cake, loaf or muffins, this is a low fat, lower sugar, higher fibre alternative to traditional lemon-cranberry recipies.
