Although the cooking time is long, most is for caramelizing the onion (40-50min). The process doesn't require constant attention. You can also just saute the onion for a few minutes. You can also cut the fat and calories by a TON by not including the mozzarella and eating it from the skillet instead.

This is a very good recipe of my Mothers' and is very filling. We serve it with a fresh garden salad of romain lettous, baby spinich, sliced radishes, carrots, red delicous apples, light sprinkle of golden delicious rasins and quartered tomatoes! OMG..it is to die for!! Enjoy!
