For those looking to reduce the carbohydrates they eat, this bread should be a help. I slice it thin and use it just like regular bread. This is so simple to make and you can have bread in no time.

I can't have gluten and my son has hypoglycaemia, so he needs a high protein diet, and can't have sweets. I'm thanful to have this favourite of his, so that when I crave a treat, I can also eat cookies. Without much work, and without feeling guilty!
For variety, you can use cooked dates instead of honey, and add anything you like: puffed or crispy rice cereal, dried fruit, coconut...
I've never made traditional stuffed peppers before. This is an adaptation of my husband's mother's stuffed pepper recipe. I chose to use bison because it's leaner and has better nutrients. And Rotel tomatoes for some spice.
