My Great-Grandma was born and brought up in the Konkan Region.She married into a Konkani family belonging to the Sawant Wadi Principality.She was adept at home remedies for every common ailment and a fantastic cook.My Mom and her sisters learnt a lot of the traditional stuff from her. She died in 1966 when I was a teen ager.Her recipes belong to a world where every ingredient was pure and tasted as it should.Everything was organically grown and available only in it's own particular Season.Maybe that's why food tasted different back then!!!
Akka my paternal Grandma made this Vegetable on Sundays for Dinner to balance the heavy mid-day meal.Made with boiled and peeled Potatoes this added a bite to the simplicity of our Sunday Dinners.
Taro Leaves are extremely popular in India.The mature Leaves are used to make a snack while the tender Leaves are cooked into a Curry in Maharashtra,Goa,Karnataka and the other three Southern States of Kerala,Tamil Nadu and Andhra Pradesh.This Vegetable is specially popular in Wedding and Pooja Menus as well as being relished on Vegetarian days and is a very tasty preparation.
The odd quantity is because I wanted to calculate the exact amount that fits in my thermos, 86 oz.
Spices can be varied and of course have no caloric impact.
The kind of tea I use does not appear in SparkPeople's food list: decaf loose Darjeeling. It's not easy to find but I don't want the caffeine and Darjeeling makes the kind of chai I'm used to. I guess any Indian, unflavored tea would work--use what you like best.
Indian Dessert or Breakfast similar to American Cream of Wheat, but it's thicker and a lot more fun!

This is the roux I make for my curries. You can use any curry mix, or mix of curries, my favorite is a mix I get from a local indian grocery store. You can pick up a jar at asian supermarkets, or online.
made this for the first time.. the spinach can easily be swapped out for kale or mixed greens or even a combo of it all. and the curry is not too spicey.
First time trying to make a coconut curry. The next time I make this I'll substitute the coconut milk for a coconut juice to try and lower the fat content
