These scrumptious peanut butter balls are like a healthier version of my 3 favorite cookies; oatmeal, peanut butter and coconut! You can always add protein powder for an extra boost of energy or even chocolate chips to make them more decadent! One of the great things about oatmeal is that it's very forgiving. You can add pretty much anything to it and it will be wonderful. I added cashews and bulgur wheat for extra protein and to bring to GI count down, and it really added to the flavor too.
My kids and I love Ice Cream so I've been experimenting with healthier options that makes everyone happy and this one was a hit.
