This is the first of a series of 100 calorie breakfast foods that I will be adding. I can mix and match two or three different recipes to add variety to my breakfasts and still be around 300 to 400 calories.
Could add in diced bacon or ham to these, even grated zucchini or carrot.

My version of the coffee shop's famous Fall / Winter offering - jumbo, spicy pumpkin muffins (with a secret, very Starbucks, ingredient) stuffed with cubes of cream cheese and crowned with pumpkin seeds. The hardest part will be waiting for them to cool!
