This is a quick and healthy alternative to chicken nuggets. It is an recipe that the whole family can join in and help make. My 2 kids, ages 7 and 12, alway want to help cook this meal when we have it.
I prefer to cook this fast in the microwave but you can do it on the stove top and oven too.
I've found that it tastes tinny if I put in oven without cream of mushroom soup, so I stopped doing that.
Who would've thought of being allergic to dairy and having mac n cheese again?
You can microwave or use the stove top to cook this one.
I like to serve it either with cornbread or over rice.
Easy to make comfort food that can even be made in microwave although I do like it by stove top too (I think cooking time is about the same for microwave or stove top).

This recipe does contain lots of sugar but per 1 tbsp. serving the calories are lower than many spreads and is so potent that a little goes a long way. Use on bread products, roasted meats, to add flavor to soups and baked goods. Really limitless potential. Goes particularly well in apple or peach recipes.
A yummy fritatta with fresh veggies. You can leave out the bacon for a meat-free dish, but I like the smokey taste it adds to the eggs. This can be made in a regular non-stick skillet, but I prefer to use my cast iron skillet.
Directions
Heat olive oil in a skillet over medium heat; saute onion until translucent, 5 to 10 minutes.
Spread potatoes and broccoli onto a microwave-safe plate. Cook in microwave until tender, 4 to 5 minutes.
Place onion, potatoes, broccoli, milk, chicken broth, pepper, salt, ginger, and thyme in the Vitamix® or blender. Start on variable 1, slowly increase to variable 10, and end on high for 4 to 5 minutes. Serve hot.

I serve this with some brown rice or over blackened red snapper. Sometimes I add scallops also.
This is a hot and hearty stew that is flexible and forgiving. Frozen or canned vegetables may be substituted. Dried thyme may be used in place of Italian seasoning. Water may be added to thin the stew since the barley soaks up the broth. Good use for leftover roast chicken.

There are a few carbs in this recipie trying to figure out how to sweeten up the cranberries without using the sugar.....will work on this one. But the sauce is great for chicken or fish. Really good with a wilted spinich salad, add some dried cranberries and blue cheese...Mmmmmm
Nana always made this SO well. It's her classic gingerbread cake with a healthy twist and is about 1/2 the calorie count as the regular recipe for the same size piece! Makes a great alternative to boxed birthday cake!
