I recently had a RNY gastric bypass, and so can no longer have white carbs, like sushi rice, pasta, potatoes, popcorn, etc. BUT, I can have the scallops I love all by themselves, instead of in a roll! So, here is what my favorite restaurant worked up for me!
Low sodium and low carb breakfast muffins. Lots of veggies and easy to make. This was the first time I made them, think I will add more veggies next time. Also I love salt and think they would be better with it so if you are not on a low sodium diet I would definitely add some.
Put these in the freezer for a quick, nutritious breakfast. Great for on the go kids too!
Cauliflower, raw, 57 grams (remove)
Broccoli, fresh, 57 grams (remove)
Carrots, raw, 57 grams (remove)
Onions, raw, 28 grams (remove)
Coconut Oil, 1 tbsp (remove)
Season to taste with:
Bragg's amino acids
Bragg's apple cider vinegar
garlic powder
celery salt
parsley
water to prevent from cooking dry
This is a great breakfast for diabetics to reduce the carbs and get a good breakfast.
