I love broccoli crunch salad, but have loathed the 400 calories per cup of some of my favorites. I've tried multiple times unsuccessfully to create a healthier version that still tastes like my favorite and that helps me enjoy eating these cruciferous powerhouses without the payback. I think I have finally got it.
Kudos to LIBRARYCAT for the initial recipe I found on Sparkrecipes that led me in the right direction. I still wanted something with less calories and sugars. . .and a bigger portion.

Lower in carbs and higher in protein, this is a super easy and very yummy dish!
Again I pulled this off another web site cause I question the nutritional value and sure enough when entered into our calculator it is lower.
I like the Jimmy Dean De-Light breakfast bowls, but not the sodium or the cost...so I made my own version. It refrigerates really well for microwaving later...

Excellent as a main dish with a salad or in a sandwich (bread not included in the nutritional info)
I fix multiples of the filling and bag it in serving portions and freeze them. Makes a quick fix dinner and I wash the saute pan once.

I added a tablespoon of butter and served with spaghetti squash for a low-carb treat!
I have just started a low carb diet and found that this makes a nice snack in between meals. you can use any type of turkey slices, those (about 1 oz) thicker from the deli work nicely.
looks like a muffin, tastes like a dream. Great for lunch, but fancy enough to serve for brunch with friends! Really - these are yummy, and I don't even love tuna fish :)
